Garden Explosion

Apparently six rows of healthy strawberry plants yield way more fruit than the planter thought. My father is a farmer to the bone. He loves planting things in excess. I have banned him from planting more than two zucchini plants because of past years explosions. After years of ignoring that ban he might have realized no one likes that much zucchini.

He has channeled the zucchini energy into strawberry plants this year. I love strawberries. Now I have to figure out what to do with a couple tons of strawberries so of course, I’m going to make jam!

Um…never done it before but I’m a computer literate woman, I know how to use a search engine. So, I’m armed with recipe and wax to seal results in glass containers. Have instructions on totally disinfecting glass by washing and then boiling containers. Then letting nothing touch glass before pouring in jelly stuff. Letting jelly cool some, not to much, before pouring hot wax, letting that cool and adding second layer of hot wax. I have cleaned, sliced and frozen mountains of strawberries. Timing seems important in this process, and a lot of boiling things. I’ll let you know how it goes.

Ooooo fresh strawberries! Lucky Lady.

I admire you for doing this. Had to laugh at the instruction "let jelly cool, not too much". That's where I get lost. How much is too much?
